Kim Iorii, owner of Cakes by Kim says requests depend on the style of the season. "Simple elegance is in style right now." Kim says. Iorii prefers to have between one and two months notice, but says she can do things "on the fly." Iorii tells couples to come in relaxed and open-minded. "some (brides) want a bride five-tier cake with lots of fillings. That makes the cake extremely heavy." Kim says simple is better. "It's the simplicity of them - not lots of color, piping or intricate detail - that I like.
